| Just a 15-minute drive from
Taipei's Hsinyi shopping district is a town called Shenkeng, which means 'deep ditch' in
Chinese. It is located in the middle section of the Jingmei River Valley and surrounded by
hills--an area that is considered the back garden of Taipei City and the hometown of tofu
by some Taipei residents. Shenkeng is the smallest township in Taipei County, and offers
history, culture and lots of fresh produce. "In the beginning of the 1990s, when the government started the idea of keeping Old Street, we are the ones who came up with the project, so we visited each household on the street to convince them that it would be profitable to open stores and restaurants with local characteristics," he said. "For example, the tofu restaurant near the entrance to the temple standing right beside the only temple on the street." There are three local delicacies that include tofu as the main ingredient: tofu stewed in red sauce, barbecued tofu and the unofficial national dish of Taiwan, stinky tofu.
